Thanksgiving Nut free, Dairy Free, Egg Free Cupcakes

Last year, as a family, we baked chocolate cupcakes and then I wrote on top the items that each family member was grateful for…some silly and some serious.  It was great fun and almost spiritual to gather around the kitchen island and feel gratitude together on Thanksgiving Day.  We made a combination of regular and min sized cupcakes.

It was just as much fun when it was time to decide which cupcake to eat!  I’m sure you can use your own favorite recipe of cupcake or muffin and icing.  I used our beloved  Vegan, nut free Chocolate Applesauce Cupcakes and Nut Free and Dairy Free Chocolate Ganache Recipe (both nut free, seeds free, dairy free, egg free and it can be Vegan if you use the proper ingredients (Vegan sugar versus regular cane sugar, etc.).  To write our words of gratitude, I  use my Icing for Icing for Thanksgiving Cupcakes Recipe.  It is simply a basic decorator’s icing recipe with some ganache added in for color.  You don’t need to add the ganache.  Also, for each cupcake recipe I bake, I make a double batch of ganache.

Variation on a theme..use a heart pan, smear safe jam on top of hearts topped smoothed over with ganache and chocolate shaved on top!
