Tasty! Dairy Free Crunchy Veggie Quiche

I updated a recipe from the Better Homes and Garden cookbook to create a Quiche that was dairy free and crunchy!  I love a slight, gentle crunch in soft warm Quiche and voila, it was found!  I cheated and used a pre-made pie crust.  I’ve always made my own but was curious to see how convenient one would be, so I picked up box at my local grocery store.  You know, it was tasty.  Instead of cow’s milk cheese I used dairy free Daiya cheddar and pepper jack flavors and soy milk and soy cream cheese replaced their cow’s milk version too.  Quiche-dairy Free was yummy!

The dairy free Quiche was a HUGE success!  Not only was it quick and easy to whip up the veggies were just right..not soggy but fresh and crisp!  Now, instead of using a pie shaped pan, I only had a rectangle shaped dish on hand.  I loaned out my pie plates and of course, can’t remember to whom.  Therefore, I need to do some patch work on the crust.

In general, I simply replaced dairy items with non-dairy, homemade pie crust with store-bought and since I feared the 1 cup of milk replaced with soy milk might be too overpowering, I used some soy cream cheese.    In all honestly, this Quiche-dairy Free is very forgiving and it is easy to make recipe changes without fear of failure.  I normal make my own crust, but my dad someone brought home a store bought pie dough that was allergy safe!

      It really was a winner! Even though my son is beginning to eat baked cheese, I can’t leave these kinds of recipes. They just taste good.

    You could probably put a little actual dairy in there to get his quota of baked dairy in for the week 😉 Thanks for sharing such a yummy recipe that’s safe! I hadn’t even thought of doing a dairy free quiche.

      Thanks Lindsey, you know how I struggle with remembering to give him dairy. Then I do remember, my own uncomftable self comes screaming out!
