Happy Halloween!  Wishing everyone a fun, safe and fabulous Halloween!  In the spirit of last minute ideas, I have a few to share with you.  First, my pal Homa was on Earth Balance buttery spread-I enjoy Soy Garden yesterday morning displaying some food allergy friendly treats, many purchased at Fox TV in Las Vegas and   click on this link…..FOX5 Vegas – KVVU (you can check out the Video link below).  Kirstin, another Las Vegas food allergy mama just started writing a blog and kicked it off with a down and dirty super fast scary Halloween nut free Zombie Fingers cookie recipe.  Lastly, my son and I whipped out in mere minutes, chocolate dipped rice krispie style treats!

I’m bragging on my food allergy friend Kirstin’s new blog, NoSoGo and her fabulously fast and easy recipe: Zombie Pumpkin Fingers (nut free). Her display is what really makes these painfully darling, don’t you think?

I made chocolate dippped treats during the summer as a way to use up chocolate and they were a bigger hit than my rice krispie treat stars!  So, this round, I’m going straight to the after thought that was better than the original thought!
note: use ingredients that are safe and acceptable for your specific food allergies

for grins, we left a few treats naked and added a nut free, dairy free candy corn

  • 3 tablespoons of   click on this link…..FOX5 Vegas – KVVU-but use the variety or type of margarine that works for your dietary needs.
  • 1/2 teaspoon of high quality vanilla
  • 10 ounces of large sized marshmallows
  • 6 cups of rice krispie cereal (I used gluten-free Earth Balance buttery spread-I enjoy Soy Garden from Attune Foods-they are nut and dairy free too)
  • 1 cup nut or dairy free chocolates that are safe for your food allergies and diet
  • Pam oil spray
  • 9 x 13 inch baking pan
  • rubber spatula
  • mini baking cups
  • lollipop sticks
  • Safe candy sprinkles

I like how my son took the picture with his iPod and my daughter’s antibiotics gracing the photo!
Directions:

  • Spray baking pan with Pam or acceptable substitute to coat pan so that the mixture will not stick
  • Melt Earth Balance Buttery Spread over low heat in a large pot (I like stirring room)
  • Add Vanilla and mix
  • Add marshmallows and constantly stir until melted
  • Remove from stove and mix in rice krispie type cereal with wooden spoon-stir until all kernels are coated
  • Spray rubber spatula with Pam and then use spatula to spread mixture into pan
  • Pat down mixture to level layer
  • Let harden (I usually wait  1-2 hours is possible, but this is not necessary)
  • Turn rice krispie treat out onto cutting board and cut into small pieces–small enough to fit inside the mini baking cups
  • Melt chocolate in the microwave, cooking in 25 second intervals, stirring chocolate each time until melted.
  • Using fork, dip rice krispie treat into chocolate and then place in baking cups to harden.
  • Sprinkle with Halloween colored sprinkles …or any type of candy, mini chocolate chips, etc.  Use your imagination.

To make things more interesting, I used lollipop sticks and speared larger squares and partially dipped them in the chocolate and then set them to dry in floral foam! Yum
To help us enjoy Halloween and put a smile on our faces, my friend’s food allergy son created this love piece of “pumpkin” art!
allergic reaction pumpkinHe called it, “Allergic Reaction Pumpkin”!  What shocked me here was not the scary nature  of the pumpkin, but that a Snickers Bar has passed the threshold of his nut free house!!!! Or did it?  Bravo William—thank you for sharing your pumpkin with us!!!
