Ever since I was a little girl eating Wright’s Pink Popcorn at the circus, state fairs and amusement parks, I have had a love for anything sweet and sticky on popped corn!  I love any kind of popcorn ball and feel huge amounts of guilt for buying caramel corn and hiding it from my kids in my closet only to wait until they are secure at school for my indulgence.  I think there is nostalgia that comes with each bite.  Somehow, caramel corn has become an inexplicable  important symbol of  sweet bliss from my childhood.  I don’t know if it is the smell, the texture or the way it sticks to my teeth…or if I am just hoping to eat enough before dentures come my way and I kiss caramel corn good-bye forever.  I can’t explain it, but it drives me to deceive my children so I don’t have to share!
To my surprise, I found this fabulous recipe in our local Healthy Beginnings free magazine for Peanut butter popcorn.  After a few minor changes, the recipe emerged as Sea Salted Sunbutter Caramel Corn!!  I even used my favorite Sunbutter flavor: Natural Omega 3 that contains flax seed!  Now, I am not a fan of the microwave, but the recipe calls for two bags of microwavable popcorn and then the remaining ingredients are melted together in the microwave.  You could easily adjust the recipe to melt the ingredients on in a sauce pan and possibly test out popcorn from an air popper.  I plan on trying that next…using the air popper.
Recipe for Food Allergy Make Over:  Sea Salte Sunbutter Caramel Corn

It is a super fast recipe that you could easily whip out for a class room treat…just bag them up in themed bags and off you go!  This recipe is painfully easy!   I went light on the Sea Salt and actually just sprinkled some on my serving before I ate it.  I had left the caramel corn in a bowl on the counter.  My father’s sweet tooth radar flicked on and he zipped down the hall to see if could sample some.  After he munched I stored the rest in an air tight container and tucked it away.  This time in the pantry, but I failed to tell the rest of the family it was there.  Unfortunately, my daughter inherited grandpa’s genes and she sniffed it out asking for some for her lunch tomorrow!  Drats.  Busted.
Before I was busted though, I did take a jar I bought from Ikea and poorly painted on a trim and polka dots. In all chaos of summer, I lost our paintbrushes and had to make due with a stiff cheap brush left behind.  I then filled it up with the caramel corn and it will be a gift for my daughter’s teacher!  I think on the next jar I will use a working paint brush and make really big polka dots by using the other end of the paint brush for the dots.

Alas, my love affair with Sunbutter continues!!!  I am thinking of trying this recipe out with the Natural Crunch flavor and maybe add in some chocolate chips after it has cooled down!

    Oh. My. Goodness.! This looks amazing, and not just because I’m biased about SunButter recipes. Popcorn balls are a lost delicacy, no? I can’t WAIT to make these for the lucky kiddos around here. Thanks for yet more inspiration! Take care.

      I made only one batch and send some to school for two teachers…they both stopped me and ask for more! So, needless to say, I’m more today. They are too easy to not make more but I am going to sprinkle Halloween themed sugar on them to be festive! Fun aren’t they?
