Here is to celebrating the beauty of the Cupcake Cup! I think it is somehow related to part of my my heritage (dear Greek friends, you know what I am talking about), but I just love serving everything in Cupcake Cups! Simple desserts look amazing, ethnic desserts oozing with honey or syrup are easily transported and served beautifully. A basic allergen friendly cupcakes can morph instantly into a delightful little festive treat. Our food allergy safe foods take on a cool new edge when presented in decorative cupcakes cups and Wilton has a huge selection too. The chocolate clusters below took me a grand total of 25 minutes from start to finish to make and is vegan, nut and gluten free and look fabulous thanks to the mini cupcake cup, a dish from TJ MAXX and Halloween clearance fabric from Jo-Ann Fabrics. Really, once you start using them, you’ll raise your glass too!
I made this simple Greek cake made with farina that is soaked in a simple syrup of sugar, water, lemon slice and cinnamon stick and voila! The simple dairy and nut free cake looks elegant and special in the black and white cupcake cups.
Last night we enjoyed homemade Spanakopita yet again dished up in simple large sized cupcake cups. Back in the day, we only had pastel colors available or if you visited a specialty shop, you could buy silver or gold foiled cups. Now, the sky is the limit!!! I’ve seen character, seasonal, color coordinated and now there are wraps that are fastened to the outside of a the cupcake cup to really dress it up.
I obsessed over purple designed cupcake cups I purchased for a wedding in which I was to bake the cupcakes as my gift to the bride and groom. When that wild fire raged through Reno in November, I actually thought to myself that if we truly had to evacuate that I would take the cupcake cups with me…too hard to replace I thought with the wedding coming soon. This is the mini size of the purple wedding cupcake cups that I used last night for my chocolate clusters:

It’s an illness, but I am so easily pleased with all the beautiful color choices, designs and themes out there. I can’t wait for the Easter cupcake cups to out!!

Okay, confession time: I lost my recipe and am re-writing it based off of this batch of spanakopita! I will post it on Thursday. So, it may need a little tweaking here and there. Ya, I’m easily pleased…can you tell?
