Dramatic I know, but these cookies taste like the holidays to me and I just need to share this recipe. I can’t eat these in the summer…they confuse my brain. Isn’t there a food out there that tastes like a memory or place? It’s like eating clam chowder in a sourdough bowl, what memories rush to your brain? These VEGAN PUMPKIN COOKIES taste like Holiday time..for me. In my happy little world, holiday time is from Halloween to New Year’s Day!
These cookies: They are peanut, tree nut, egg, dairy, soy and sesame seed free –possibly corn if you don’t use corn oil. I use canola, but I am not sure if there is a relationship to corn or if a cross contact risk exists.
They cookies are super, super easy to make! You mix all the wet ingredients together, then in a separate bowl, you mix the dry stuff…then mix both together, toss in raisins (or craisins) and you’re ready for the oven. Now, in the spirit of ease and lack of coordination, I use a cookie scoop so my cookies are uniform in shape. Otherwise, some will burn while others struggle to get themselves baked in my oven. A lovely lady named Mrs. Howell gave me this recipe and it was the first Vegan cookie I ever baked and it remains a favorite, she knew best!
