…to National Peanut Butter Day!  Clearly, my answer to this day was to make Vegan nut free Sunbutter cookies, of course.  I made a batch and then brought them to my daughter’s school to celebrate this day…Sunbutter® style!  The teacher cracked up as I handed over the plate and several administrators enjoyed the cookies saying they never have eaten Sunbutter®! Now, I don’t know who proclaims these days but on the National Peanut Board website they list out the various “Peanut Holidays” and June 12th is National Peanut Butter Cookie day.  So, am I a day late on this blog post for the National Peanut Butter Day, which was yesterday, or I’m too early for the PB Cookie day?  Never-the-less, theses cookies were a HUGE hit and you simply must try this recipe.  Unless, you are allergic to wheat or Sunbutter®, of course.

My recipe was adapted from the King Arthur Flour® website, which I highly suggest you check out as they also offer gluten-free recipes, baking tips, supplies and flours.  I changed it up by not using egg and using Ener-G’s Egg Replacer® and by using the bottom of a food processor’s food “pusher” to flatten the cookie into a spiral.

I do NOT like to use a fork to flatten the cookie since it will look like a peanut butter cookie and I don’t want to send confusing messages.  I simply dipped the pusher in organic cane sugar and then flattened the cookie.

These cookies do not spread out, so you can pack them in pretty good on your cookie sheet.  My kids were thrilled and got a huge kick out of celebrating National Peanut Butter Day!  It was rather empowering in an odd way and it led to a great conversation in the car about finding solutions.  Although, my daughter drifted off onto some strange tangent of worrying about folks in Kansas who may not have Sunbutter® and how terrible it must be to be allergic to peanut butter and to never have eaten Sunbutter®.  Her brother tried to convince her that Sunbutter® can be purchased over the internet, but she wasn’t having anything to do with that idea?!?!  Why Kansas?  I still don’t get it.
