I never realized they had such a comprehensive website that included fabulous recipes. You need to click on the PETA Living tab to find Vegan (egg, dairy and animal product free )recipes.

Substitutions for egg are divided up into categories
- leavening or binding,
- egg replacers for custards and quiches
Dairy substitutions are divided up into categories of
- buttermilk replacement
- cow’s milk replacer options
- margarine replacement options
- sweetened condensed milk replacer

My aha moment has arrived. I know feel confident of when I should use flax seed as a replacer versus baking powder and oil replacer thanks to PETA!
