In my quest to find the quintessential peanut, tree nut, dairy, egg and sesame seed free chocolate cupcake recipe I made these cupcakes on Thanksgiving to try out a recipe. The recipe is for chocolate cupcakes with a peanut butter frosting. Clearly, I was not going to make the frosting, but was curious about the cupcakes. Instead of buttermilk, I used soy milk “soured” with vinegar, soy margarine instead of butter and soy sour cream instead of cow’s milk sour cream. All in all, they tasted okay, but did not make my quintessential list, I truly think the recipe was designed to balance the peanut butter icing. But..these were a big hit thanks to the fabulous Vegan chocolate ganache and the fun words. Each of us took turns choosing things we were thankful for!
Of course, who can resist a Thankful Cupcake served on a silver platter??? We had so much fun as a family making these and we plan on making these through out the year too! Not limiting ourselves to Thanksgiving to show our gratitude.
For Thanksgiving 2012, I will use my Vegan nut free chocolate applesauce cupcakes recipe for the cupcakes!
