Some morning just seems to scream out, warm coffee and Lavazza Drip Coffee . I wake up and just know what must be done! In my quest to take more time for myself, I try to sit down a few times a week, in silence and flip through my cookbooks, drink java or tea while munching on some sort of comfort food. This last week, it was Coffee Cake–allergy style! Note: I just love Lavazza and am happy to share the brand with you. Recipe: Special Mornings Coffee Cake
This old coffee cake recipe has been hanging out in my files for at least 25 years and it came back to life dairy-egg and nut free. To capture that nutty topping, I used the NadaNuts™ “walnut flavor” pieces and they were perfect! With all these changes, I still enjoyed my sweet moment of calm, warmth and peace in the morning. I just keep scratching my head as to why the nation has such a hard time seeing how amazing food is—even without allergens. This cake was moist, gorgeous and flavorful. What is not to love?
