Secret Food Allergy Filling for Chocolate Cupcakes!

Recently, I found Sneaky Chef’s No Nut Butter made from golden peas in my local grocery store!  I snapped it up right away–everything I’ve ever tasted from Sneaky Chef have been pure winners and they meet the food allergy needs of my family.  I decided to start playing around, so I made chocolate cupcakes using the No Nut Butter as a filling.  Here is the fun part:  my son refused to eat the cupcakes based on this firm belief that peas should not be in a dessert.  Well, I smeared chocolate ganache on top of each cupcake and then placed a small white candy on top to identify the cupcakes that were filled with raspberry jam.  I goofed on my ID system and he ate a  No Nut Butter filled cupcake and loved it!

Ha!  I love when that happens.  Here is how I created the new food allergy savvy dessert:

  • I baked simple dairy free, egg free, and nut free chocolate applesauce cupcakes.
  • Then I filled a plastic bottle with a pointy tip with the No Nut Butter, inserted the tip into the cupcake and squeezed into the center.
  • I also used raspberry jam for other cupcakes for the sake of variety.
  • I topped the cupcakes off with a nice dollop of dairy free, nut free and egg free ganache.
  • They were devoured quickly.

Peas are a legume, so check in with your physician if you or your child has a peanut allergy to confirm peas are safe to consume.  Please note:  I am was not paid by Sneaky Chef to write about their products or to say lovely things about their products.  I purchased the jar of No Nut Butter myself and got creative on my own.

    I love filling cupcakes with stuff! 🙂 I figure you can use just about anything that goes with the flavor profile: marshmallow fluff, jam, seed butters, caramel, chocolate – the possibilities are endless! I’m glad he liked your newest fine, too! 🙂 I am a firm believer in trying it before you judge it. You just might be pleasantly surprised! 😀

    Wow, they look delicious! Just out of curiosity how do you do your ganache? I’ve tried a few different versions but while they’re fine they’re pretty close to chocolate icing. I’m trying to find something a bit richer.
