Santa is a lover of the Sunbutter® cookie. We have seen it with our own peanut-tree nut-dairy-egg-free loving eyes. My daughter leaves these cookies on a plate on Christmas Eve along with a glass of soy milk and only crumbs can be found the next morning. This recipe became a favorite around years ago–so it is tried, true and considered a classic in casa de Moassessi! The sun butter provides a complex taste while the texture is a slightly crunchy on the edges and soft in the center. I once tried this recipe using soy nut butter and it just doesn’t work!
