Sunbutter chocolate treatsFor the last 13 years, my son has hosted a food stand to raise funds to help battle food insecurity in our community. His pal Kienan joined him over the last ten years and even though the man boys are now in college, they come together to bake, make signs and raise funds. This last year, I thought I’d help them shake things up a bit and we tried our this recipe, which ended up being a huge hit!
The flavor was complex and rich, which had folks pausing to guess the ingredients. Rice Krispie style treats are so much fun since your imagination is the driving force here. The best part about the home spun food span is that we proudly share our allergen friendly treats with our community. It’s a subtle way of showing off how fabulous dairy-egg-nut and some gluten free baking can be.

Rich, flavorful Sunbutter Rice Krispy Style Treats are YUM
Recipe Type: Dessert

Prep time: 5 mins
Cook time: 20 mins
Total time: 25 mins
Serves: 24 bars
Gluten – dairy – egg – peanut – tree nut – sesame seed free and can be made soy free. Of courses, you can always use butter, soy, etc. This recipe is adapted from the Food Network’s 50 Bars Cookies. NOTE: WOW butter has sugar added and will create a much sweeter treat–which may not be a bad thing!
Ingredients
  • 1/4 cup non-dairy spread or margarine such as Earth Balance
  • 10 ounce bag of mini-marshmallows
  • 1/2 cup Sunbutter
  • 8 cups rice krispie type cereal
  • 1 1/2 teaspoon vanilla
  • 1/2 cups chocolate chips
  • Cooking spray
Instructions
  1. Thoroughly coat a 9 x 13 pan with cooking spray and set aside
  2. Coat a rubber spatula with cooking spray and set aside
  3. Over very low heat, melt the non-dairy spread or margarine
  4. Add mini-marshmallows, vanilla and Sunbutter
  5. Thoroughly mix
  6. Add rice krispie cereal and chocolate chips
  7. Mix until cereal pieces are well coated
  8. Press into prepared pan and uses spatula to even out the top of the mixture
  9. Allow to harden for at least two hours
  10. Cut into desired size or shapes
Notes
Get adventurous and add 1 cup of crushed peppermint candy or top with additional chocolate chips.

The key to any rice krispie recipe is coating the pan and spatula with cooking spray. Life is so much better when you aren’t stuck to your kitchen tools!
