Peach muffins dairy free egg free nut free GratefulfoodieReady for some serious sunshine, I whipped up these muffins last night. Even though my reality is that I am hoping for more snow, I was craving a little spring and the frozen peaches were calling from the freezer. These muffins are super moist and I added some ginger and cinnamon for a little kick. My kids were surprised, yet happy to see some peaches during the winter.
Hope these bring you a little ray of springtime today.

Peachy Morning Muffins Brighten Up the Day

Serves: 24
Frozen Peaches and bananas create a moist dairy-egg-nut free sweet and tasty breakfast treat or after school snack. Honey is the key sweetener here and it’s all made in one bowl.
Ingredients
  • 2 cups flour
  • 2 teaspoons baking powder
  • 1 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1/2 teaspoon cinnamon
  • 1/4 teaspoons ground ginger powder
  • 1/2 vegetable oil
  • 3/4 cup honey (preferably a light orange blossom)
  • 5 tablespoons applesauce
  • 2 large ripe bananas, mashed
  • 1.5 cup frozen peaches, chopped and thawed
  • 2 tablespoons cane sugar
  • 1/2 teaspoon cinnamon
Instructions
  1. Mix flour, baking powder, baking soda, cinnamon, ginger and salt in large bowl.
  2. Create a well in the center of the flour mixture and add in oil, honey and applesauce.
  3. Mix well.
  4. Add bananas and peaches and mix thoroughly.
  5. In a small bowl, mix sugar and cinnamon.
  6. Fill muffin cups 2/3 full of batter.
  7. Sprinkle 1/2 teaspoon of sugar on top of each muffin.
  8. Bake at 350 degrees for 15-18 minutes, until toothpick inserted in center of muffin comes out clean.
