Prom the Ask GratefulfoodieLast night was a hoot in my household. I’ve passed the food allergy baking baton.  My son, Cyrus and his buddy, Avi decided to bake to ask out Cyrus’ perspective prom dates. We had many laughs and I really am soaking up these times since both will be heading off to college in four short months! One great part of the evening was that even though the cupcake is straight up vegan nut free fabulousness, egg and dairy allergies are no longer in this household. Cyrus outgrew those two allergens years ago, but that simple chocolate cupcake remains a favorite amongst Cyrus’ buddies.
You’ll have to stay tuned to see if the cupcakes and the boy’s, I mean young man, dazzle with his charming personality and attracted the right response! If not, they had a blast and Avi even brought home a plate full of cupcakes to his vegan eating family. I tried explaining that some good old fashioned tasty baking could be date bait. They didn’t believe me!

The boys laughed when I said, you have no dates, so you bake eh?

Deconstruction of the hopefully date attracting peanut-tree nut-dairy-egg free cupcake:

  • Chocolate cupcake (see recipe below)
  • Biscoff Cookie Butter (Vegan)
  • Chocolate Ganache recipe from Vegan Cupcakes Take Over the World: 75 Dairy-Free Recipes for Cupcakes that Rule
Chocolate Biscoff filled cupcake
Recipe Type: Dessert

Prep time: 20 mins
Cook time: 18 mins
Total time: 38 mins
Serves: 20
This one bowl chocolate cupcake is filled with Biscoff Cookie butter and topped with a rich dark chocolate ganache
Ingredients
  • 2 cups flour
  • 1 cup organic cane sugar
  • 1/4 cup packed brown sugar
  • 1/4 cup dark cocoa
  • 2 tsp baking soda
  • 1/4 tsp salt
  • 1/4 cup vegetable oil
  • 1 1/2 cup applesauce
  • 2 teaspoons vanilla
  • Biscoff Cookie Butter Spread
  • Vegan Cupcakes Take Over the World ganache recipe
Instructions
  1. Mix together flour, both sugars, cocoa, baking soda and salt.
  2. Create a nice well in the center of the mixture.
  3. Pour in the oil, applesauce and vanilla.
  4. Mix well.
  5. Fill cupcake cupcakes 1/3 full of batter.
  6. Add 1/2 to 1 teaspoon of the Biscoff Cookie Butter Spread.
  7. Fill with additional batter to 2/3 full.
  8. Bake until <g class=”gr_ gr_61 gr-alert gr_gramm gr_disable_anim_appear Grammar only-ins doubleReplace replaceWithoutSep” id=”61″ data-gr-id=”61″>toothpick</g> inserted in-between the center and outer edges of <g class=”gr_ gr_62 gr-alert gr_gramm gr_disable_anim_appear Grammar only-ins replaceWithoutSep” id=”62″ data-gr-id=”62″>cupcake</g>. About 15-18 minutes or until <g class=”gr_ gr_63 gr-alert gr_gramm gr_disable_anim_appear Grammar only-ins doubleReplace replaceWithoutSep” id=”63″ data-gr-id=”63″>top</g> of cupcake springs back to the touch.
  9. When cool, top with warm ganache

The Biscoff Cookie Spread complimented the dark chocolate really well. Now I have a need to experiment more with Biscoff. Of course, chocolate must be involved.
Disclaimer: my love for Biscoff Cookie Spread is all my own thanks to a large jar of cookie spread love hubby brought home. Biscoff does not know I blogged about them, nor did they pay me or ask me to fall in love with their product.

    Love this! (But it kills me how elaborate asking someone to prom has become now. Back in my day, you just asked between classes at his/her locker. [said in my best granny voice] Best wishes to Cyrus and his buddy. Let us know what the answer is!

      Baking the question is new to me too! Love your granny voice by the way. A few month ago a few more boys were baking bread on a Friday night. I get a kick out of it to be honest. I hope they keep it up. I’ll post the results,
