Fluffy, slightly sweet with a light banana and cinnamon touch…great with a dark roast coffee or tea. I was incredibly lucky to receive a sample from the good folks at Nadanut™ of their old school revived Wheat Nuts® product that disappeared from grocery store shelves years ago. I remember eating them back in the day and experienced a rush of nostalgia when I took a bite of the newly re-introducted product under the Nadanut™ label-which are produced by Inclusion Technologies. I have to say that I just love the name of this company. I was back at my childhood friend’s house, soaking up the sun on a lazy summer day, discussing how here mother is the only health nut in Amercia as we munched. I never knew that I would one day become one of those health nuts!
Here’s the good baking news: the Nadanut products have been baking up fabulously! Here’s the even better nut allergy news: Nadanuts™ are made in a NUT-FREE facility. Most of the varieties contain dairy with the exception of the Cinnamon Flakes, (which are not available to the retail market yet), that I used in this recipe. So, if you have an anaphylactic allergy, call the manufacturer to discuss shared lines. My son has outgrown his dairy allergy, so we are exploring this new land of moo.

The texture is similiar to a nut and the packaging might make your heart skip a beat when you are staring down at a lable using words like pecan or walnut. Rest assured, the wheat nuts are a modern substitute for those nuts! Yes, think un-pecan pie or un-baklava. As I continue to bake with these delightful little nostalgic morsels, I’ll keep on posting fun recipes.
The website is minimalist, but I hear there might be some fresh streamlined changes on the horizon. When I called with questions, the employee was lovely and helpful.
