I love this concept created by Vegetarian Mamma!  Her wonderful blogsite features many gluten-free, nut free, soy free and dairy free vegetarian recipes that look incredibly tempting.  Being a hard-core foodie I was thrilled to discover Vegetarian Mamma thanks to the Circle of Friends Top 25 Food Allergy Mom Blogs. Every Monday, in conjunction with Better Batter, who produces and sells gluten-free flour mixes, Veg Mamma creates five gluten-free allergy friendly dinner ideas.

Who doesn’t love a girl who schedules pancakes for dinner?  Seriously?  Check out October 15th’s menu.  By the way, Veg Mamma’s son is allergic to peanut, tree nuts, gluten, soy and dairy, plus her family embraces non-GMO and dye free foods.
Even though it is not Monday yet, I am personally trying to get my head around better menu planning and have set Saturday aside to noodle through recipes, so I will work a week late from Veg Mamma’s suggestions.  In the spirit of budgeting, I’m returning to how my parents used to grocery shop…once a week.  I find myself spending needlessly instead of turning my pantry, planning and budgeting. Menu planning not only saves $$$, but it is also saves time and stress of trying to figure out last minute meals.
