Simple.  Fast.  Dairy free.  Tree Nut Free.  Peanut Free.  Egg Free and Sesame Free.  This chocolate applesauce cake is a classic recipe that takes on many lives from simple muffins to elegant cake!  The recipe is a one bowl wonder!  I also used the incredibly rich and lovely Vegan Ganache recipe from Vegan Cupcakes Take Over the World: 75 Dairy-Free Recipes for Cupcakes that Rule.  Confession, the  chocolate piped border was from a can!  Shhhhh, don’t tell, but I was running late and it was left over from a school project.  I whipped out this recipe and used my favorite heart shaped pans to create a heart for a good friend’s birthday.  Then, I poured the remaining batter into darling cupcake holders and decorated the simple chocolate applesauce cupcakes into something special.  But truly, the darling container set the stage for celebration.  Quality ingredients and presentation are simply everything!

Luscious mini Dairy Free, Egg Free, Nut Free Chocolate Applesauce Cakes with Raspberry

  • Chocolate Applesauce Cake recipe
  • Vegan ganache recipe from Vegan Cupcakes Take Over the World: 75 Dairy-Free Recipes for Cupcakes that Rule
  • Seedless Raspberry jam or jelly
  • Chocolate Icing (shhh, remember it was from a can)
  • Fresh organic raspberries

Steps to Allergen Savvy Baking Success

  • Bake the chocolate applesauce cake recipe in small heart shaped pans AND muffins cups
  • Cool enough to handle and spread jam on hearts and using my jam in the bottle method, fill the cupcakes
  • Pipe fancy border if you enjoy cake decorating, if not–skip it!
  • Make and spread warm ganache using a teaspoon on the heart cakes and cupcakes
  • Top with fresh raspberry
  • If you really want to go for the elegant wow factor, use a potato peeler and shave an allergen safe chocolate bar over the treats.

What I enjoy most about baking is taking tried and true recipes and simply creating new combinations!  Most of all, using the best quality ingredients is key.  Using safe and researched ingredients is what makes me the most happiest and it keeps me sane.  I continually read labels, call manufacturers and stock my pantry with safe baking ingredients.

Happy Food Allergy or Special Diet Baking!  Vegan baking is still by far my most favorite of all.
