Go Dairy Free ice Cream cupcakes

There is no doubt these cupcakes/dessert/moment of culinary genius from Go Dairy Free just knocked it out of the park! Her Triple Chocolate Ice Cream Cupcakes and wicked divine!  These can be nut free for us nut free types or with that fabulous Cashew Milk ice cream. When I need my nut fix, I head over to Alisa Fleming’s house (author of Go Dairy Free) to dig through her kitchen. My allergist advised that I try to eat nuts and sesame once a week to keep me from becoming allergic to my kid’s allergens! The secret that makes this recipe a household must is what I call a “put together” recipe. You really just are putting together items that are winners on their own to create something special without spending hours in the kitchen. She incorporated treasures from Enjoy Life Foods Cookies and ice cream from So Delicious.

This is the kind of recipe that I can whip together the night before based on staples are kept in my house. Yes, it’s sad, but true.  Dairy free Ice Cream, cookies and cream are staples; they balance out our veggies (or that is my excuse right now). Especially with summer coming our way, I like to have a nice supply of company ready ingredients and recipes for those impromptu gathers or dinners.
