Now, I know I am HUGELY biased since I think food allergic folks are amazing. But…think about it: our children learn coping mechanisms at an early age that adults may never achieve in their lifetime. We take food so seriously that we unwittingly grow into foodies of the finest kind. Due to our allergies, we enjoy some of the best foods out there since more often than not, overly processed foods don’t work for us. Lastly, we get creative and are pushed to go the extra mile for celebrations and holidays. So, this October, we just must live with it: we rock Halloween! Okay, self imposed glory aside, the kids and I made our first pass at Halloween treats. Once again, we had to kick off with our beloved Sunbutter One key for any celebration is to use props! I find beauty in cellophane bags that my husband does not appreciate. Nothing says party like a printed cello bag and ribbon!
We decided to make Halloween themed Sunbutter popcorn caramel corn balls (RECIPE here)…sans the sea salt. The kids thought that was too sophisticated for Halloween. We decided that we may add “safe” candy to our next batch of Sunbutter Caramel corn balls for effect. Live Free Foods sells these darling orange and purple jellybeans that we are going to order to roll the popcorn balls in! I am placing my order tomorrow and am confident they’ll arrive in time for Halloween! Yes, I am a little behind myself on stocking my pantry shelves.
In making this recipe, one thing we found to be most helpful is that we pop the popcorn and then dump it into a huge metal bowl (hit up your local restaurant supplier for one of these inexpensive bowls) and sort out all the un-popped kernels. My daughter does this well and is our head sorter. Once sorted, we then microwave the remaining ingredients in the recipe, pour over the popped corn, mix and we’re good to go.
Now, we experimented with using cupcake holders and little paper tasting cups with spider rings. They got the thumbs ups from the kids. Although, the cellophane bags were biggest hits. Now step back for a moment and take stock: this recipe is SUPER EASY since you simply microwave popcorn, toss three ingredients (marshmallows, brown sugar and Sunbutter) into a bowl and microwave those. Pour onto the popcorn and then scoop into bags. To me, the hardest part of the recipe is shopping for the ingredients and since we shop weekly…well, this is a no brainer.
These are darling and are super special since they are presented SPECIAL. Now, here is my foodie side coming out…presentation is just everything! If the brain perceives food as tasty and then chances are person eating will believe it and the food will taste fabulous! Also, instead of our food allergic children feeling left out, the shoe will flip to the other foot and the kids without food allergies are going to want the nut free, dairy free, seed free, egg free and gluten free treats!
