Yesterday, in honor of Memorial Day, I faked out my family and friends with a new gluten free dessert! Ha-they thought they were getting wheat!
I made a 1/4 sheet cake from The Pure Pantry‘s Dark Chocolate Cake mix and served it with fresh blueberries and strawberries and a funky red and blue sparkly thingy (don’t quite know what to call it, but it was festive enough).
After everyone dove in and started complementing the cake, I confessed that it was was from prepared mix and it was gluten free made from brown rice flour and quinoa flour! I had planned on taking a photo to share but my stomach got the best of me and when I put my fork down I realized I had forgotten to take the photo.
special note: I was serving old friends and had checked earlier with them regarding any food restrictions. I would never “surprise” anyone with new ingredients without checking into dietary limitations.
The Pure Pantry is new to me and I wanted to give them a try. I found the mix on sale the other day at Whole Foods Market. After visiting their website, I discovered their products can be ordered on line as well in addition to gluten free living information and a recipe book. Elizabeth Kaplan, who started this company is a professional chef and Celiac sufferer. She is my new gluten free queen!
