Fruit Bin Blueberry Muffins

blueberry muffin peanut tree nut dairy egg freeWhat to do with tired looking strawberries, pears or other fruit? Just blend them up and toss them into muffins! My fruit bin was looking rather sad the other day. My fruit was on its last limb and was not appetizing enough to adorn my yogurt. I hate any kind of waste, so I plopped a few pieces into my Ninja Blender and after a few whirls the nicely blended leftovers were ready to be turned into fluffy muffins.
The best part of the experiment was that the muffins were fluffier than usually as I replaced the applesauce with the fruit mix blend. I had used strawberries, blueberries, pear and banana.

Fruit Bin Blueberry Muffins

This one bowl recipe is peanut-treenut-dairy-egg-soy-seed free. The best part is that it is fast and a tried and true favorite.
Ingredients
  • 2 cups flour
  • 2 teaspoons baking soda
  • 1/2 teaspoons salt
  • 1/2 cup vegetable oil
  • 3/4 cup honey
  • 5 tablespoon fruit puree made from leftover fruit, such as pears, berries, bananas, apple, etc.
  • 2 ripe bananas, mashed
  • 2 cups blueberries, washed and air dried
Instructions
  1. Preheat oven to 350 degrees.
  2. Line muffin tins with cupcake liners
  3. In large mixing bowl, mix flour, baking soda and salt together
  4. Create well inside of flour mixture and pour in oil, honey, fruit puree and mix together with dry ingredients
  5. Stir in mashed banana
  6. Add blueberries
  7. Bake until golden brown and when muffin springs back when touched
  8. Cool to touch and enjoy
  9. Note: dry mixture can be made ahead of time to speed up prep time
