I read about these darling little dessert gems  in Martha Steward Living Magazine.   l have hated admitting this over the last 20 years, but I just love that Martha!  At first when she hit the scene I worshiped her up until one day, she made a salad from brussell sprout leaves.  Goodness I thochocolate pudding pot 2ught, this women has lost her sense of reality.  First off, who has the time to peel the leaves off of brussell sprouts, secondly, the world does not embrace brussell sprout recipes.  Really now!  Then I watched her rise, become known as some crazy, mean and calculating woman, serve jail time.  She truly hasn’t changed from her creative beginnings, okay, other than  becoming a marketing mogul, her stuff is still darn wonderful. This time, her Potted Chocolate Mint Puddings caught my eye.  I took her recipe and performed a “food allergy make-over” on these fabulous desserts!  These are her version and below are my version!
We had invited friends over for dinner, there would be nine of us and I wanted to make something fun, different, light and in line with our food allergies.  I simply can’t stand serving two separate desserts to accommodate our allergies and guests.  There are just too many fabulous desserts in our dairy/nut and egg free world to fuss around with two desserts.  Two desserts means keeping my food allergy EYE open so that I can make sure things don’t get cross contaminated during serving and not enjoying the moment.
So here was plan…

  • Buy or make your favorite allergen safe chocolate pudding.
  • Buy Nabisco Oreos or your allergen safe gluten free or other chocolate cookies.
  • Cut fresh sprigs of mint from garden.
  • Buy cute votives at Cost Plus World Market Votives.
  • Buy cute plain demitasse spoons at Cost Plus World Market.

Here is what happened…

  • Found the votive pots at World Market (the exact ones are available on-line too-click on the link above)
  • Bought the demitasse spoons at World Market
  • I purchased allergen safe pudding.
  • Grandpa brought home the Oreos
  • Cut mint springs from the garden
  • Best of all….EVERYONE LOVED THIS DESSERT!

The result….. darling beyond words and insanely easy and fast!!!

Food Allergy Make Over Pudding Pot!

FOOD ALLERGY MAKE-OVER: chocolate pudding pots  RECIPE

Food Allergy Make Over Chocolate Pudding Pot Recipe

Serves 8
2 packages of Chocolate Flavor allergen safe pudding (each pack contains 4 pudding cups)
Peppermint flavoring optional (add a drop to each pudding cup to taste if you want chocolate mint flavor)
14 original Oreos cookies-finely crushed in ziplock bag to create dirt
8 sprigs of fresh mint-washed and dried
8 pot votives
8 demitasse spoons.
Fill pots with 1 cup each of chocolate pudding.  Smooth down and stir to remove any air bubbles that may be pressed against sides of pots.  Smooth top and wet a cloth or paper towel and wipe down the inside rim to remove any specks of pudding.  Scoop crushed cookies on top of  pudding.  Remove bottom leaves from sprigs and insert into pot and serve with demitasse spoon.
Isn’t this just crazy regarding how simple the recipe.  Now, I would usually make everything from scratch but sometimes it is very nice to have an easy recipe in your back pocket after a long week.
